Cauliflower and Cheese
Cauliflower - another vegetable I’m not exactly crazy about. Call it the lily-livered cousin of a broccoli….judging solely on its color that is. In fact, this vegetable is from the same family, Brassicaceae, as the broccoli. Despite its lack of coloration, it is a vegetable packed with vitamins and minerals that are all good for you.
Here’s a rather common and simple way of enjoying cauliflower on the dinner table. This is my own even simpler version of the recipe, minus the white sauce.

Cauliflower and Cheese
Microwave a pack of frozen cauliflower as directed on package. Sprinkle with salt and pepper and some grated cheese. Consider a strongly-flavored cheese to contrast with the blandness of the cauliflower. For starters try a sharp cheddar which is what I used in this particular recipe.
Put the cauliflower under the broiler for a few minutes, just enough to melt the cheese. Serve hot.

good for you relly…I was so surprised to find it’s such a healthy veggie. I try to have it more often and this cheese topped recipe is the easiest I know…
